Everyday Eats: Monday, January 19th, 2015

Welcome back, everyone!  I hope you had a good weekend!

I’m going to go ahead and throw this out there – I totally slipped up last Friday (hence the lack of a post).  My Aunt Holly came into town, and while I did well for breakfast out at a local diner, I totally ate far too many tortilla chips and salsa at the Mexican restaurant we frequented for dinner!  I swear… prior to keto, I would have said my weaknesses were french fries and rice.  Now I’m going with french fries and chips and salsa!  So that’s been fun, detoxing from the carbs and bringing the water weight back off.  It’s so damn annoying how fast I bloat up when I eat simple carbs.  You’d think I would have learned my lesson by now.  I guess food addiction is a real thing.

Anyway, I’ve been back on track for a couple of days, and things are going good again.  I’m really happy to be starting back to work on Thursday because that’ll really cut down the amount of times I eat out (no more lunch runs to fast food joints for Meemaw midday, or picking up biscuits for breakfast).  A structured schedule is great for me, too, and I’ll be packing my lunch every day.  So look forward to seeing some boring tupperware pictures on Friday!

Unfortunately, my bff and I are going to have to put our semi-regular lunch dates on hold for awhile, because our days off don’t really overlap.  Sad!  Today was the last day we both had off together, so we made the most of it.  We went shopping, wandering through a furniture outlet and Walmart, and had lunch, of course.  We tried Chilis, which we very rarely go to.  For some reason my family doesn’t seem to care for it very much, and my bff and I never even really think of it as an option when we go out.  I was really glad to see a large variety of keto-friendly foods on their menu.  It’ll definitely have to be added into the rotation of places to eat out.

I am giving myself a little caloric leeway here.  I did have a couple of chips with salsa – only a couple! – and I don’t know how to calculate that.  I’m absolutely positive I didn’t go over 30g of carbs today, and I’m sure I didn’t go over on cals either, but I do know I ate slightly more than 1,152.  As for my macros, I killed my protein goal, stayed under my carb limit, and am still blissfully satiated a few hours after dinner.

I’m working on a couple of posts tonight and will try to publish at least one tomorrow.  Coming soon is my fish fry recipe as well as restaurant reviews of Bojangles and Chilis.  You may notice that I’ve been updating the site here and there – I’ve got a Keto section of the main menu, I’ve updated my comic page, and I’ve also been working on some of my gaming stuff.
