Everyday Eats: Monday, November 17th, 2014

Welcome back, everyone!

I had a wonderful vacation last week where I flew down to Dallas with my bff and her family, to go to her little brother’s wedding.  Their family is my second family and I love them all!  I actually had the honor of standing by my bro’s side as a “groomsmaid.”  We all had a blast and I am so happy to welcome his wife into the family as my new honorary sister :)

I made a comment when I bought my dress for the wedding that it fit, but it was a little tight.  I wanted to try to lose 10lbs by the time the wedding rolled around so the dress fit more loosely.  Well, that didn’t happen – with my grandfather dying and all of that, I am sad to say I didn’t drop a single pound – but I did maintain.  Moreover, the dress did fit better – and measurements that I took right before leaving showed that I have continued to lose inches all over.  Weight training, you guys.  It’s amazing.  I am super excited that finally, FINALLY, my arms seem to be shrinking.  These batwings need to go away!!

As predicted, we ate our way through Dallas.  I tried a Whataburger (lame!  Five Guys is WAY better).  The rehearsal dinner and the wedding were both catered by an Italian place.  I finally ate at a Joe’s Crab Shack.  And really, the best of all, there was a Mexican restaurant straight across the road from our hotel that was to die for.  They had the best refried beans and salsa I’ve ever had.  I’ve pretty much been dreaming about that place since we got back.  It’s a good thing we don’t have one here, because it would make keto harder than it should be!!

I think I’m mostly over the hump for detoxing my body of the carbs, and am solidly back on track.  Time to lose some weight for the holidays!

Chicken quesadilla with cheddar and cilantro in a low carb tortilla, topped with a dollop of sour cream and a drizzle of taco sauce.



Today was a little low in calories, but I really wasn’t hungry most of the day.  There was this weird moment where I ate my lunch and felt empty still, but then I drank a bunch of water because I realized I’d been neglecting that, and then I was magically satiated.  We ate dinner really late, actually, and I probably could have skipped it.  Oh, yeah – the “snack” was actually some tea with cream that I had first thing in the morning when I woke up.  Forgot to photograph that!

As far as macros go, I was low on protein – should have tried to hit that.  I am also skeptical as to the carb count for the veggie skewer.  Their typical skewers come loaded with zukes, tomatoes, onions, peppers, and mushrooms, but they will custom-make them with whatever veggie combo you want.  The macros for it are for the standard skewer.  I’m pretty sure my zuke-and-tomato one is a little less.  I’m also not sure what exactly the nutrition looked like on the creamed spinach, because I couldn’t find that anywhere.  It didn’t have breadcrumbs or anything in it, and it seemed keto, but you can’t really tell 100%.  It also could have been more calorically dense, so at least I have a little wiggle room with my daily intake.

Anyway, it was a decent day.  CB and I have shifted our lifting schedule to T/Th/Sat because my favorite cousin and her boyfriend want to start hitting the gym with us, and M/W/F didn’t work for them.  I’m also pleased with that decision because it clears me to start going back to yoga on M/W/F evenings.  Woot!  Can’t wait to get back to the mat!  And I’m super excited to finally have another lady lifting heavy with me!
