Everyday Eats: Tuesday, November 18th, 2014

Today was a good day!  After planning to fix burgers for dinner, I decided that I really needed to buy a burger press – you know, one of those kitchen contraptions that shapes and flattens a burger for you.  Most of them are set to make quarter pound or half pound patties, but I found one for $5 at Walmart that made 6oz patties – just what I like to make for myself.  Woohoo!  I had a pound package of ground beef thawed for dinner, as well as some leftover beef from earlier in the week, so I did something different tonight.  I tossed all the meat together in my KitchenAid along with a thawed and drained package of chopped spinach, a couple of eggs, and seasoning.  It gave me enough to make 8 patties!  I fixed two for dinner, and stored the remainder frozen together as pairs for quick and easy use later on.  We’ll see how that works out!

This evening, my cousin joined us for our workout.  It was enjoyable, although I couldn’t squat as much as normal because… well, this is embarassing… I pulled a gluteal muscle last Friday.  So, in layman’s terms, my ass is sore *eyeroll* and it’s really cramping my style.  Lame!  Tomorrow I am planning on going back to yoga to work on my flexibility and to stretch all my muscles out again.

Dinner

Please note that I did not photograph my protein shake or my piece of dark chocolate.  There’s only so many ways I can take pictures of those things, and you know what they look like by now, anyway!

Met my protein goal for sure – didn’t really need the shake, but it was good and I shared it with my cousin anyway as I was cooking dinner (accounted for the full thing, though, because I’m not sure how much we each drank).  Did well on carbs, and I remained below my calorie limit.  A good day!

Not sure what’s on the menu for tomorrow.  I’m thinking of putting a roast on to cook in the crockpot, but we’ll see.  All I know for sure is that I’m going to yoga, because I need Victoria (my instructor) to destroy me in delightful ways.  I’ve missed it!
