Everyday Eats: Tuesday, October 7th, 2014

I don’t even know why I bother trying to predict what I’m going to eat the next day.  It’s never spot-on.

Today I figured we’d be in Nashville by lunch time, because Meemaw wanted “to get up there early.”  Negatory.  I don’t even know why I fell for that one.  When I woke up early, Meemaw informed me that she’d rather go “about one.”  That’s her answer for everything.  What time do you want to go for lunch?  “About one.”  What time do you want to go to the commissary?  “About one.”  What time should we plan so-and-so’s birthday party?  “About one.”

So we ate along the way.  Good thing, because Centennial’s cafeteria ranks far below Vanderbilt’s in variety.  There’s a hot bar, a pizza bar, a Subway, and a Dairi Queen.  Bleh.  My best bet seems to be to hope there’s something not breaded on the hot bar, or get a bunless burger.  A salad from Subway is out because they don’t have spinach at that location.  Bleh.

Lunch

We stopped by Whitt’s BBQ on our way out of town, and I saw a sign that said they now have smoked bologna.  So I had to try that, of course.  It doesn’t make the most attractive picture, but it sure did taste good.  I have no idea how much that thing was.  I guesstimated 4oz.  I had that in addition to my normal 6oz pulled pork and small side of baked beans.

Dinner

It was another late night in Nashville, and we didn’t get home until after 9:30.  Meemaw had to have some McDonald’s on the trip home, but I rode easy knowing that I had chicken thighs waiting in the crockpot for me.  This cooking method is so, so simple and always turns out perfectly.  As soon as I got home, I popped a steamer bag of broccoli in the microwave, and CB and I were eating and watching The Big Bang Theory within 10 minutes.  It doesn’t get easier than that!

I didn’t eat too much today.  IF makes it easy to eat low cal.  As long as I wait to eat after noon, I’m good with two meals for the day.  Today I met my protein goal with 104g, and I kept my net carbs under 30g – they were a bit higher, of course, because I consumed baked beans at lunch.  My macros were right at 47/42/12.  I just didn’t eat all that much fat today.  But that’s okay, because you’re supposed to eat fat to help keep you full, and I’m feeling satiated enough right now.

Tomorrow is our ketoversary, and we still haven’t decided what we want for dinner.  I guess we’ll play it by ear!
