Everyday Eats: Wednesday, October 8th, 2014

Happy Ketoversary to me and Canadian Bacon!!  It’s hard to believe that we’ve been following this diet for so long.  My views on nutrition have changed drastically this past year, and for the first time in my life, I firmly feel like I can stick to this and get to a normal and healthy weight.  That is a mind-blowing thought!  I plan to write up a long post here soon, reflecting on the past year and our progress, so stay tuned for that!  It’s just a matter of finding time to do it…

Sugarbandit is still in the hospital, and so I am still taking Meemaw to Nashville on a daily basis.  I thought I was going to have today free, because Mom was off work and was going to take her.  Instead, Mom sweet-talked me into going, too, with promises of shopping for new clothes and going to the Mall at Green Hills.  What can I say, I’m a sucker (and I love my momma).  I did get a really cute gray knit shrug for the winter as well as a beautiful shawl to pair with my dress for the wedding next month, so that’s a win!

Lunch

I really like barbecue joints.  They’re so easy to eat keto because you don’t have to get bread and because they often have a plethora of sides.  You’re not pigeonholed into getting french fries like you are at most fast food places.  There’s nothing better than ordering a bigass plate of meat!

Today we swung by Dickey’s Barbecue, which is a new place that’s sprung up by the interstate, so it was really convenient.  I ordered their special, which varies by the day, but is always cheaper and comes with two sides and a drink.  Today it was a sandwich called “The Westerner” that came with two meats.  I just asked them to serve it to me without the bread – voila, two servings of meat, two sides, and a large drink for $8.

Lunch was pretty calorically dense, but it kept me full all day.  Mom and Meemaw kept snacking on and off, but I was satisfied with a bellyful of smoked meat.  Yuuuummmm.

Workout

As soon as I got home, CB and I jumped in the car to head to the gym.  I was late getting back into town, so we didn’t have much time.  I had to cut a few exercises off, but I kept all of the big lifts.  My legs are STILL hurting today from squatting on Monday, so I know I’m going to be absolutely wrecked tomorrow.  I’ll probably be waddling around bow-legged.  But I swear I can already start to see some more definition in my legs after only doing this for a few weeks… I keep reminding myself that I’m going to look awesome and be super strong as long as I stay dedicated!

Dinner

I fixed dinner right after we got back from the gym.  I gave CB the option of bunless burgers or pizzadillas, and no surprise, he picked the pizzadillas.  That was just fine with me as they are fast to cook and I was worn out at that point.  We ate them while watching the premiere of DC’s newest television show, The Flash.  It is a spinoff of Arrow, which we love.  The first episode was very promising and I can’t wait to see more!

Nutrition

I went a little over on calories today, but not much – and it compensates for the lower calorie counts I’ve had lately.  I just met my protein goal, and while my carbs were a little high, they weren’t absurd.  My macros were 64/25/10, which is pretty spot-on for keto.  An overall good day!

Tomorrow I’m going to run around some with my bffe, and we’re going to go to lunch.  I’m not sure where, but it’s bound to be good.  She’s so supportive of my diet and always makes sure we go somewhere I can eat, so no big deal there.  After that, I am taking Meemaw to Nashville again.  I imagine we’ll get home fairly late.  I don’t think I’m going to crockpot anything.  Dinner’ll probably be the bunless burgers we didn’t have tonight.  Or maybe I’ll go really crazy and just brown the beef and we can have taco salads.  That actually sounds really good…
